Huila is possibly Colombia’s best-known department for exceptional microlots. Huila’s geographical accessibility, warm subtropical forests, high elevations, and micro-climate diversity have sustained one of specialty coffee’s most beloved regions for many years.


Dedicated Duo
At only a few hectares, La Terraza is the small farm owned and managed by Juliana Guevara and Wbeimar Lasso, a Colombian Cup Tasters Champion and third generation coffee producer. Both are fiercely passionate and rightly proud of the work they do. The farm’s elevation makes for a cool climate with especially frigid nights, affecting many aspects of coffee production, including coffee cherry maturation, fermentation, and the drying process. Being in a very specific micro-climate encourages coffee trees to fruit nearly the full calendar year, requiring constant monitoring and harvesting in small quantities.

Coffee Specifics
This microlot was hand-picked by La Terraza’s permanent labor force, regarded by Juliana and Wbeimar to be tuned-in to each cultivar’s unique ripening patterns. After harvesting, the coffee was de-pulped and fermented for up to 56 hours in concrete tanks. Then the parchment was thoroughly washed and sun dried on a combination of patios and toldos, a traditional Colombian rooftop awning designed especially for coffee drying. Drying took between 16-24 days for each day lot to complete.
